Our Fijian cuisine night




The weather has been way too hot for my liking. But at least that means we can try some tropical cuisines – like Fijian! This was a fun night, complete with Fijian music and dancing.







It was very hard to make this one look pretty in the photos, but this spinach and coconut milk dish tasted much better than it looks. Technically it’s meant to be made with taro leaves but once again we had to settle for ingredients we could actually find.



Coconut fish curry




This was my favourite dish of the night – a creamy, mildly spiced curry made with whiting fillets. I’m not a huge fan of seafood but I really liked this one. Coconut milk can make nearly anything taste amazing!




Banana cake




Banana cake isn’t a very interesting dessert, but it’s simple and delicious. This was quite a dense cake, much like a banana bread. I think I’d add just a little more banana to the recipe if I made it again.


I hope the weather’s cooled down a little by the time of our next cuisine night. But, if not, at least we can try another tropical, summery cuisine.
